You know sherry. Or at least you think you do. Did you know that on some level sherry is just spoiled wine? While we would throw away a bottle of oxidized wine, we also rever oxidized wine in the form of sherry. In a recent piece I charted the path sherry takes from wine to oxidized end product and explored the many varieties of sherry as well as its close relatives. Thanks to its diverse combination of flavor notes, sherry is often used in cocktails (to great effect!) spanning a wide range of flavor with different grades of oxidation and aging. Overall, it’s just something to savor. So do yourself a favor and educate yourself on sherry and all its deliciousness!
